Homemade Mini Corn Dog Bites

These super moist and tasty homemade mini corn dogs are so easy to make that you won't every buy the store bought version again!

Ingredients
  

  • 2 cup flour
  • 1 cup corn meal
  • 1 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1/2 cup oil
  • 1 cup milk
  • 3 large eggs
  • 10 hot dogs cut into 1/2" pieces

Instructions
 

  • Preheat oven to 350oF. Cut hot dogs into 1/2" pieces and set aside.
  • Mix all dry ingredients together, stirring to evenly combine. Add wet in ingredients and mix well.
  • Using a scooper or small spoon, add roughly one tablespoon of the corn muffin mixture to either a greased or silicon mini muffin pan. Place one hot dog piece in each muffin section, pushing down slightly.
  • Bake mini corn dogs for roughly 8 to 10 minutes or until cornbread is firm. Let cool before removing from muffin pan.

Notes

You can also use 5 hot dogs and make a second pan of plain mini corn bread muffins with the extra corn bread mix.
