Easy Homemade Mini Corn Dog Bites

There are plenty of times where I come across a homemade version of one of my favorite foods and I think to myself – “nope, totally not worth it – wayyyyy to much work and it probably tastes like $#!&!”

Well, these homemade mini corn dog bites are quite the opposite – they’re totally worth it and you need to give them a try.  Not only will your kids enjoy them, but you will too.

Are Homemade Mini Corn Dog Bites Worth it?

I absolutely think these homemade mini corn dog bites are worth it, but I’m biased.

Is it easy to throw some store-bought mini corn dogs on a sheet pan and bake them in the oven?  Absolutely!  However, this recipe is still very simple, and inexpensive, and personally, I think results in a better product!

I’m by no means saying these are “healthier” than the store bought version, nor did I drastically change any ingredients to provide a nutritional advantage because sometimes trying to make a certain food “healthier” just isn’t worth the expense of the flavor and quality.

One of the best things about this homemade mini corn dog bites recipe is that the ingredients are fairly basic and likely something you already have on hand in your pantry. 

  • Flour – good ole all-purpose flour works just fine
  • Cornmeal – find this in the baking section
  • Sugar
  • Baking powder
  • Salt
  • Butter – I used unsalted, and if you use salted butter, you can skip the salt in the recipe
  • Oil – I used vegetable oil
  • Milk – try whole milk for a few more calories if you have a light eater
  • Eggs
  • Hot dogs – choose a hot dog your family enjoys!

Equipment for Homemade Mini Corn Dog Bites

  • Mini muffin tray – I recommend a silicone mini muffin tray so they pop out easier!
  • Oven – duh
  • Measuring spoons
  • Measure cups
  • Mixing bowl
  • Scooper – this is optional, but makes it so much easier to add the mixture to the muffin tray
  • Knife
  • Cutting board

How to make Mini Corn Dog Bites

To make your homemade mini corn dog bites, you’ll start by making a homemade corn muffin mix.  First add all your dry ingredients to a bowl, mixing until they’re well combined.  

From here you’ll combine the wet ingredients to the dry ingredients, again mixing until combined.

I’ve found it easiest to use a scooper to add the corn muffin batter to the mini muffin tray.  Only fill the mini muffin sections ½ full because you’ll be adding your hot dogs, which will take up more space too. 

Another great thing about this recipe is that you get to choose what kind of hot dog you put into your mini corn dog bites.  I personally just used a cheap hot dog that was on sale and cut them into roughly ½’ to  ¾” chunks.  

Next up you’ll push one piece of hot dog into each mini muffin section.  

To finish up, you’ll bake your mini corn dog bites at 350 degrees Fahrenheit for roughly 10-15 minutes.  Feel free to let them cool for 5-10 minutes before popping out of the muffin tray.

If you find that you have leftover corn muffin mix, whip up a few mini cornbread muffins to add to a different meal, such as a One Pot Chili Mac

Can You Freeze Mini Corn Dogs?

Yet another great thing about these homemade mini corn dog bites is that you can freeze the extra for later. 

I recommend freezing your mini corn dog bites individually on a parchment paper lined sheet pan first, then adding them once they’re individually frozen to a freezer bag.  This way they won’t stick together, leaving you with one large clump of mini corn dogs. 

You can freeze your mini corn dog bites for up to three months for the best quality.  

How to Store and Reheat

If your family somehow manages to not eat all the mini corn dog bites at one meal, you can easily refrigerate the leftovers for 3-5 days or freeze for up to three months.

When reheating leftover refrigerated mini corn dog bites, simply microwave for 1-2 minutes or until they reach an internal temperature of 165 degrees Fahrenheit.  

If you’re reheating them from frozen, I recommend taking them out in advance and placing them in the refrigerator to thaw for 1-3 hours prior to heating them in the microwave. 

What to Serve With

These homemade mini corn dog bites themselves contain two food groups; protein and grains.  To help make a more complete meal, all you really need to add is a fruit or vegetable.

To keep this meal simple, I recommend simply adding whatever fresh fruit or veggie you have hanging out in your fridge. 

You can certainly add additional sides, but it’s not always necessary. 

And of course, these homemade mini corn dogs wouldn’t be complete with out some ketchup to dip in, or mustard if that’s your preference.

Homemade Mini Corn Dog Bites

These super moist and tasty homemade mini corn dogs are so easy to make that you won't every buy the store bought version again!

Ingredients
  

  • 2 cup flour
  • 1 cup corn meal
  • 1 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1/2 cup oil
  • 3 large eggs
  • 10 hot dogs cut into 1/2" pieces

Instructions
 

  • Preheat oven to 350oF. Cut hot dogs into 1/2" pieces and set aside.
  • Mix all dry ingredients together, stirring to evenly combine. Add wet in ingredients and mix well.
  • Using a scooper or small spoon, add roughly one tablespoon of the corn muffin mixture to either a greased or silicon mini muffin pan. Place one hot dog piece in each muffin section, pushing down slightly.
  • Bake mini corn dogs for roughly 8 to 10 minutes or until cornbread is firm. Let cool before removing from muffin pan.

Notes

You can also use 5 hot dogs and make a second pan of plain mini corn bread muffins with the extra corn bread mix.
